Make The Perfect Cauliflower Cheese!

Ingredients:

A Large Cauliflower
1 Litre Milk
A Bay Leaf
A Small Onion
2 Cloves
Pinch Freshly Ground Black Pepper
Pinch Salt
50g Butter
50g Plain Flour
4 Tbsp Double Cream
100g Strong Cheddar Cheese
4 Tbsp Grated Parmesan/strong hard cheese


Method:

Preheat your oven to 220C (Gas 7).

In a saucepan, pour in the milk and add the bay leaf. Peel the onion and stick the cloves into it and add it to the saucepan. Bring to the boil, immediately turn off the heat and leave to stand for 10 minutes to infuse.

Meanwhile, melt the butter in a heavy-based saucepan, add the flour and cook the mixture stirring regularly. Remove the bay leaf and onion from the milk. Once the butter/flour mixture looks biscuit-coloured, slowly pour in the milk, stirring all the time and bring it almost to the boil. As it thickens to a smooth sauce, add freshly ground pepper to taste. Turn the heat down low and simmer the sauce for 15-20 minutes. Stir in the cream, then the grated cheeses and add salt to taste.

Next, boil your cauliflower in a large pan of lightly salted water for 5-10 minutes – until you can just insert the tip of a knife into the thickest part with little resistance. Drain well and place the cauliflower in a baking dish.

Next, pour the hot sauce over your Cauliflower, top with more grated cheese (if desired) and bake until the cauliflower is tender and the sauce golden and bubbling.

Serve when the cauliflower is tender and the sauce is bubbling and delicious! This is super served as a side dish with a traditional roast, with sausages and mash or used to top a baked potato.
